TODAY'S GUEST: Sen. Roger F. Wicker

United States Senator Roger F. Wicker has represented the state of Mississippi in the U.S. Senate since 2007. Wicker is the ranking member of the Senate Committee on Commerce, Science, and Transportation. He is a senior member of the Armed Services Committee. He also serves on the Environment and Public Works Committee and the Rules Committee. From 1995 to 2007, Wicker served in the U.S. House of Representatives. He started his career in public service in the Mississippi Senate representing Lee and Pontotoc counties.

Senator Wicker also served on active duty in the U.S. Air Force, retiring from the reserve in 2004 with the rank of lieutenant colonel. Wicker and his wife, Gayle, live in Tupelo and have three children and eight grandchildren.

MINUTES: August 23, 2022
Ryan Kelly presided over the meeting. Anthony Harris provided the opening prayer. Brian Shaver led us in the Pledge of Allegiance. Ryan led the club in the Four Way Test. The meeting was held at the Holiday Inn in Hattiesburg.
 
Mallory announced that our club will meet on August 30, which is the 5th Tuesday of the month. Senator Roger Wicker will be the guest speaker.  We will not meet on September 6.
 
Stew Dean Introduced our guests for today. Danyella Terrell is a guest of Mavis Creagh. Jane Hankins is a guest of Bill McLeod. Courtney Peyton is a guest of Annie Payton.
 
Stew then conducted the 50/50 raffle. Mavis Creagh was the winner, taking $60 home. Thanks to all of the members who are participating in the raffle. Proceeds from it will be donated to a local charity.
 
Lucy Sanguinetti then introduced today’s guest speaker, Toni Floyd. Toni is a teacher in the Hattiesburg High School’s Culinary Arts Career and Technical Education program. She currently has 15 students enrolled in the program. Students have to apply for the program and all of the applicants are screened before being admitted.
 
The course is designed to give students a working knowledge of many different segments in the food service and hospitality industry. The class focuses on a hands-on learning environment is a small class setting. Students focus on professional food preparation and related areas such as catering and hotel/restaurant management. They also learn equipment operation, safety,02 and sanitation; stocks, soups, and sauces; meat, poultry and seafood cookery; vegetable and starch cookery; baking and dessert preparation, cold food production; menu planning and record keeping.
 
The CTE program offers credentialing in Servsafe Food Handler and ServSafe Manager certification. Graduates often start in their profession at a higher payrate than those who do not go through the program.
There being no further business to come before the club, Ryan thanked Toni for her remarks and then adjourned the meeting with our motto: “Service Above Self.”
