RANDY PIERCE • Author & Director at MS Judicial College at U.M.

Randy is the director of the Mississippi Judicial College at the University of Mississippi School of Law. He previously served on the Mississippi Supreme Court, as a Chancellor for the Sixteenth Chancery Court District, and as a member of the Mississippi House of Representatives. Randy received his Juris Doctor from the University of Mississippi School of Law where he served as LSSB President. He has an undergraduate degree in accounting and a Master’s Degree in Business Administration from the University of Southern Mississippi. He is also a Certified Public Accountant.

MINUTES: April 6, 2021
President Mark Killingsworth presided over today’s meeting. Steven Utroska provided the opening prayer. Gene Owens led us in the Pledge of Allegiance. The meeting was held at the Holiday Inn North and on Zoom. Joe Bost thanked those who helped with today’s meeting.
Stew Deen then introduced today’s guest speaker, Sam Burke. Sam is the Executive Director of the St. Vincent de Paul Community Pharmacy. He has been in this position since 2011. The Community Pharmacy is in Biloxi, however’ they have opened a pharmacy here in the Hattiesburg area. The Pharmacy began operations in 1998 and has been serving the Hattiesburg area for the past 5 years. The Pharmacy serves individuals who need prescription assistance. It buys prescriptions at the wholesale cost, receives sample drugs from area doctors, and has partnerships with nursing homes that provide unused prescriptions.

Chef Katie Dixon opened the Birdhouse Cafe in 2017 to create an environment where everyone leaves feeling loved, nourished & inspired. The Birdhouse offers a range of power foods from acai bowls and salads to healthy takes on traditional, southern fare. Aside from owning the Birdhouse, Katie also offers a full-service meal prep program, a healthy sweet treats menu, private dining, event catering & cooking classes.

Katie also serves as a spokesperson for the MS UProot Campaign - a campaign with the objective of “building a healthier Mississippi from the ground up.” Katie’s heart to transform lives with the power of food hasn’t gone unnoticed in her local community. She was awarded Best Chef of the Pine Belt in 2017 and Best Personality & Best New Restaurant in the Pine Belt for 2018. 

She was also a finalist on Masterchef Season 7 & Food Network Star season 14. Since food is fuel for the mind, body, and soul in Katie’s eyes, we can’t go without mentioning that she is a certified personal trainer in TRX, gravity & barre. Katie believes that anyone can live life to the fullest if you can inspire people to love & nourish their bodies. Her heart is to make people wake up and love the face they greet in the mirror each morning.

When she isn’t in the kitchen, Katie loves to travel & draws influence from culinary traditions all over the world.
